It’s no secret that I enjoy cooking/baking/making new things, my time in the kitchen has been greatly amped up due to being home 99.9% of the time. This weekend we tackled the cool deliciousness that is “Cookie Monster Ice Cream”. I was a little worried about giving it a go, but it turned out to be simple & quick. It is a no churn recipe so no ice cream maker is needed and if you don’t have a hand mixer/stand mixer then get ready for a huge arm workout!
2 cups of heavy cream
14 oz sweetened condensed milk
1 tpsb vanilla
½ tsp blue food coloring
20 chocolate sandwich cookies – we used Oreos
15 chocolate chip cookies – we used Rainbow Bit
Chop the cookies and set aside (make sure to sample a few bits……I feel less guilty eating a few bits as opposed to full cookies) Whip heavy cream, food coloring and vanilla until stiff peaks form. Once you have stiff peaks add in the condensed milk and mix until it is blended in. Fold in about ¾ of the cookies and transfer to a loaf pan. I didn’t have a loaf pan large enough, which shocked me and has since been added to my list of things to buy. Okay back on track, I ended up using a steel bowl instead and it worked just fine, once you have it in a pan/bowl/whatever, top with remaining cookies and freeze. We did an overnight freeze and dug in the next day.
With a simple ice cream base like this recipe offers, coming up with new flavors is going to be endless. What flavor combination should I try next??
